Industrial enzymes can be derived from a variety of plant, animal or microbial sources, although most production processes rely on the last one. Intracellular enzymes usually remain bound to the cells and must, therefore, be released unless the microorganisms themselves act as catalysts. Although the specific fermentation procedures used by manufacturers vary to some extent, there are still only two main culture methods, solid and deep fermentation.

 

Most microbial enzymes are produced by aerobic deep fermentation, which provides better control of growth factors than solid-state methods. The recovery and purification techniques discussed are typical techniques for fermenting enzymes, although they are generally applicable to most extraction and refining operations, regardless of whether the source of the enzyme is a plant, animal or microbial source. In particular, it involves the following processes: cell disruption, precipitation and solid-liquid separation, including concentration by ultrafiltration. Complete product specifications can be produced by using a combination of these technologies at different stages of the recycling process.
