  • Selecting of locally sourced and organic produce, to cultivate a unique selection of microorganisms and hence flavour production.

  • Application of Raw Sauce’s signature conditions on their high-quality ingredients, causing the wild fermentation process to unfold.

  • Wild fermentation with no added bacterial strains, which creates a naturally occurring ecosystem of probiotic bacteria.

  • Self-preserving: lactic acid is produced during fermentation, which makes Raw Sauce shelf-stable without added vinegar or preservatives.

Initially, the company’s best seller, the Red Serrano’s flavour is matched by its vibrant and crisp red colour. The Peach Habanero, made from Habanero pepper, garlic, and peaches offers a sweet and juicy balance which is slightly milder than the Red Serrano sauce.

The Salsa Verde – a fermented salsa –  is the thickest and mildest of Raw Sauce’s menu. Simple yet savoury, the Salsa Verde undergoes a second fermentation which produces a slight effervescent fizz.
